Because the D.O.P. standard is a guarantee of excellence, it certifies that their products are of the highest quality and *truly* come from Italy. Plus, they are grown near Vesuvius, one of the richest soils for cultivating tomatoes. Well, now our mouths are watering!

Many chefs describe San Marzano D.O.P. tomatoes as the best in the world. It’s not surprising, they win awards everywhere! We love their tomatoes because their skin is a bit firmer, they contain less water, and their flavor is more pronounced (and sweeter!). And if you can’t decide between whole or crushed tomatoes for your pizza sauce, read this. Although whole tomatoes require an extra step (crushing), they are recommended by all the top chefs. And they’re definitely worth the extra work. However, you do end up saving time with crushed tomatoes because you don’t have that extra step. In either case, you won’t need to wait for them to simmer! Simply test out both versions and see which one you like better.

For an amazing homemade pizza sauce with your D.O.P tomatoes, just follow these steps:

  1. Combine the olive oil, salt, and a spoonful of whole tomatoes in the blender (you may also add garlic, oregano, chili flakes, sugar, and a bit of tomato paste to taste).
  2. Blend.
  3. Add the rest of the tomatoes and blend again (not too long to avoid removing too much water from the tomatoes).
